Happenings....

So much going on, so little time to blog!


We have been busy little bees around here lately....what happened to the "lazy days" of summer????


And lately we've also been fond of these little guys ....



Right before Christmas, Elizabeth became very fond of Lego's.


We purchased her a "house" kit, one that you could build three different houses out of the same Lego's just different direction. Anyhow, she LOVED it and has built them over and over again.







The only problem...


The kit only came with ONE person.

For her birthday, she asked for some Lego People.


Have any of you ever tried to find Lego people??????


NOT.EASY!

If you want to find Star Wars, Harry Potter, or even Toy Story, then that is a breeze. While I know my child has a huge imagination, I still didn't think fair to give her Darth Vader, Princess Leia and Mr. Potato Head and expect her to imagine them as this cute little family inside her newly finished English Tutor home she just built.


So after exhausting myself locally, I clicked over here at the end of my rainbow and found my pot of gold...


Yes, if you clicked over you read correctly..256 pieces. An entire community! I was thrilled! And so was this little girl....






Well, my blogging time is cut short today...working on a birthday post from Miss Elizabeth's day :)

Seafood......

Remember the old joke....

"I am on a seafood diet"

"Huh...what's that?"

"I see food, and I eat it"



I feel that way about Seafood alone. Here is an easy summer time recipe that was enjoyed with some of that Prosciutto I had left from this....



Enjoy!


This is what you will need.....





Get you a large pot of boiling  water for your 16oz box of Linguine noodles and boil for about 10 mins until done. Don't forget this is the time to salt/flavor your noodles!



 add a drizzle (about 2 tbls) of olive oil and cube one stick of butter to a large (very large) skillet on med heat.

 add one large garlic clove chopped and stir in melted oil/butter.
 add your sweet peppers....



 let simmer on medium heat while you peel your 1 lb of steamed shrimp (no season).


 crank up the heat and add about a 1 cup of a white wine. I used a Pinot Grigio.....



 squeeze in 1/2 a lemon.


Chop about 4-5 slices of Prosciutto......


Stir in your Shrimp....



Add your cooked Pasta.....


Sprinkle your chopped prosciutto...
 toss.....


Top with a shredded cheese blend and chopped chives...Serve with toasty bread and a creamy Cesar salad.....



 This meal took about 15-20mins to prepare. Super simple, Super delicious!
