first step...... my SIL's inspiration...



your mayo. scoop about two spoonfuls of mayo in a small bowl. add your basil (chopped...I used about 8-10 very small leaves).....







 give it a whip, add plastic wrap to cover and pop in the fridge until serving....


my kiddos eat these cherry tomatoes like candy. We buy multiple packs per week. Take 3 large handfuls and if they are this large, slice in half......


Add them to a small skillet, sprinkle with salt and crank the heat to med high for about 4-5 mins..


Let me introduce you to my friend.....

 
 
I bought her on accident, and I will admit, it was the best accident I ever made; besides the one when I got preggo with my second child when my first child was only 8 weeks old......
 
 
 add about 1/4 cup of my friend to your tomatoes, and let it hang out on a simmer for about 3-4 mins..









okay people, BLT's on white bread only. I'm sorry, only sour dough can substitute in my book. This is my Nana's braided bread recipe. Maybe one day when I feel really adventurous I might blog the process of making it. I finally mastered it, and smells of sweet memories fill my home when making it. Slice it up and lightly butter for the toasting....



Your kitchen will then be the popular hang out spot, because it will lure every living creature within smelling distance because of these....




bacon, oh bacon, how I love you. we've got different opinions in our house. Crispy crunchy, fatty, a little of both. Make it the way you like it...(I vote a little crispy)

toast these guys under your broiler.....

and you are ready to plate!
 
spread one side with the basil mayo.....



Add a big scoopful of tomatoes....

 we add avocado slices, because......well, do I even need to say why ;)

top with a couple slices of bacon....

and your lettuce...


No picture of me adding the top slice of bread. As you can see it is stacked pretty high. The next part is the best, but not the prettiest. Add your top slice, smash and devour this yummy goodness.

Seriously, your sanity will be questioned if you don't try this.

Brain overload....

I am in overload people! I feel like I need a good 4 hours on this blog, or on the couch, bathtub, the gym; you know, where ever you just dump your thoughts.....


School is getting smoother and smoother, although when I talked to Tim today and mentioned the girls were taking a math test at the moment, I got a, "y'all are still doing school at 2pm??". Smooth, doesn't always mean our usual 12:30pm finish line, but almost always still feels like a race to finish.


We have soaked up these beautiful "fallish" days and taken multiple break/snack times to enjoy the beauty outdoors. Our southern heat, can sneak up on us in a hurry, so we make it a point to make it a big deal when the temps hang out around the 70's. And hey, if it starts out in the 60's, we don't even care if it reaches 90 degrees that day, the boots will probably be on our feet.



I'm starting to feel the pressure to come up with some funky fun crafts from my girls. Don't get me wrong, they have an imagination of their own, it's just me fueling it that takes time. On another note. We are only in week 4 of school and I have managed to go through an entire cartridge of ink for my printer. I am thinking that I am going to have to add a line to my budget or start getting the Sunday paper in search of some $$ saving coupons........ or both!


Our girls have fallen in love with blogging and so it seems we fight over the computer and camera sometimes. If you have never blogged before, let me just tell you; when you start out, it can take hours to make a post happen. Downloading pictures, editing pictures, tending to you interruptions, gathering your thoughts after the interruptions, editing your post, etc.

I ditched the picture editing over a year ago, and try to save my long inspired posts for when I am in the house alone (which is why I haven't had one of those in awhile). All to say, that our girls are getting a little taste of what a writer goes through, and I'm glad they are.

I have recipes galore, boo coodles of thoughtful posts in my head, decorating ideas, but to think they will make it to the blog anytime soon, I feel it not. I'm getting there, and a lot faster then I thought. It's just I keep having these moments every now and then; and what I mean by moments, is sometimes they're border line panic attacks, like "I am their only teacher! They had four teachers teaching seven subjects last year. They have had ten teachers in their life they can compare me too!" kind of moments. Not to mention, that budget....yeah, the never thought about paper plates have joined our family after realizing that the three meals a day is causing our dish washer to run sometimes three cycles a day, and the toilet paper....oh, the amount of toilet paper.....


Homeschooling has been life changing. Not easy, not terribly hard, not bad, but not always good. But we know this is what we're supposed to do for right now; and we know the "right now" can change at any moment. One day I hope to post about why we decided to Home school. I was Home Schooled myself and swore I would NEVER Home school my own children. Homeschooling our girls was a terribly hard, but yet extremely easy decision to make.....and with that confusing remark, I'll leave y'all hanging for another post at another time.

it's official....








Not only did we celebrate a successful school day with a dance party in the kitchen. This girl.....

was told during her 13 year old check up today, that she is officially taller then me...sigh. I will shortly (no pun intended) be looking up when talking to her; and my shoulders under hers when we hug. How does time slip away?!?!
 
 
 
We also, successfully made this......



And now, will officially be gaining 5lbs over the next few months because of it. Really, we've already "tasted" it, and it is UNBELIEVABLE!
 
*note: I didn't have pumpkin pie spice, but knew that it consisted of Nutmeg,Cinnamon and All Spice, and thought I would mix and make my own. Well, I was out of All Spice. So a 1/2 tsp of Nutmeg and 1/2 tsp of Cinnamon is was! And unless someone can prove to me the All Spice is needed to make it more fabulous, I will stick with my mistake. Also, ours baked for 58 mins...... funny I know, and every oven is different, but the extra 8 minutes was needed!*

just a quick hello!

Hello Peeps!

We are learning a whole lot of  new normal around here. It's all good for us, just keeps me on my toes! One of which is our morning breakfast routine.

We now have an awesome opportunity to eat breakfast as a family. About two years ago, I cut cereal completely out of our breakfast routine.

I just felt like a good protein start to the morning was some good ol' brain food for my kiddos. We eat an egg or two; boiled, poached, scrambled, whatever. This little quick and easy recipe some of you might have heard of. I'm really not even sure where I heard it from, but it helps me big time to plan my breakfast the night before, especially if I would like a few, maybe 15 mins, all to myself while the house is still quiet. This will accompany your eggs quite nicely or just eating along side some fruit.


I didn't plan on blogging this until after two steps were complete, so I'll catch you up.....


This is 1 package of ground pork sausage browned/cooked crumbled in a skillet and drained from grease, added to 1 package of cream cheese. Blended in my mixer....



Open two packages of Crescent Rolls and place them on parchment paper.....





connect all the triangles (each package) and then spread like so.....


until your rectangles are around 10x16 or so...this doesn't have to be perfect measurements.


spread 1/2 sausage mixture on one dough and repeat with other.


roll it up length wise......



and then I cut the parchment paper in 1/2 and rolled the sausage roll in it to keep from sticking.








wrap in cling wrap (I was out!) or foil wrap.





And stick in the fridge over night....(I'm sure you could freeze this for a month or so I would think??)


In the morning, slice 'em up with a serrated knife..... (about 18 slices per roll...we do one roll, and save the other for another day).

bake at 400 degrees on a greased baking sheet for around 18mins....just check for them to be golden brown like so.....


 
 
and then enjoy!

This Story Bible was given to us as a gift the day before we started school by some very dear friends. We absolutely love it! The chapters are short and perfect for children (and Mama) to grasp. It has been fun to read and discuss the stories, along side our other Bible lesson. You may want to purchase one.
