eat.....

I love food{period} I love cooking, baking, presentation, the whole kit and caboodle. AND, I just love to EAT!


When we were on our beach adventure with my brother and fam, I fell in love with this.....



But with the $300 price tag, it was not going to make it's way to my kitchen. BUT, after shopping in the same store, I found a basket full of these really cool letters. My mind started spinning and I started talking out loud, and because my SIL was there I didn't look too crazy, and she agreed and therefore I created this for my pantry door....









 with just a little over 10% of the cost of the other one.


I grew up in a family of seven. When Tim and I got married, it was very hard for me to scale down in the "cooking for two" department.

My passion continues to grow and I am trying to start a collection of pictures and recipes. The problem is, I do not cook by a recipe and I never write anything down. So my thought was.........

and attempt to show you how I make it..... here we go:

top two ingredients from Sam's club...

 and Tilapia (my girls favorite). Grind a generous amount of salt on fish before adding the spices. Bake at 400 degrees for about 20-25mins


I actually added about 3 tbls of pesto to this as well, sorry left out of pic!

Boil tortellini about 5-7mins (I used half package) in salty water, drain, return noodles to pot(NEVER rinse your noodles), drizzle just a tad of olive oil (1 tbls), add tomatoes (however many you want), sprinkle with salt, turn the heat on low, cover pot (this just allows your tomatoes to heat and soften a bit...also makes the flavor pop out) for about 5 mins. Stir in pesto and cheese (about 1 cup) and toss.



Sautee' fresh green beans (purchased from Sam's as well (one of two packages used)) in about 2 tbls of olive oil, 1 tbls of butter, and about 3-4 garlic cloves crushed. and of course salt....


simmer and cover with lid for about 20 mins....


Add about 1/4 c. soy sauce, a couple tablespoons of orange juice (which I NEVER have, but did that day!) can always use a tsp or so of zest from an orange (what I recommend). 1/4- 1/2c of honey.  toss together and continue to simmer another 15mins.


then if you want an appetizer or late night snack try this......

sliced baguettes drizzled with olive oil, with a slice of fresh mozzarella, and topped with a basil leaf....toasted until melted (picture was before toasting)....




 this last picture was a late night snack last night accompanied with a glass of wine :)

And "on the menu" tonight.... homemade pizza....hopefully will get some pictures in....

My mouth is watering over this meal! Everyone in my household loves talapia, so I may have to try this recipe. And the "EAT" decor is so cool - congrats on such a great find!

Hey girl. I tried the green bean last night. I used a bag of frozen beans. It truly was so good. I think next time I'll add some bacon bits.
